Steamed Sea Bass with Lime and Chilli

A whole pla kapong (sea bass) fish steamed until just barely set, then drenched in a broth of lime juice, fish sauce, garlic, chilli and a suggestion of coriander. It is bright and violent and utterly addictive. The version worth seeking out is the one where the lime arrived this morning and the chilli was chosen with intent.
