Baked Prawns with Glass Noodles

Large prawns baked on a bed of glass noodles that have soaked up a rich, slightly sticky sauce of oyster sauce, sesame oil, garlic and ginger — often finished tableside in a clay pot still hissing from the oven. The noodles at the bottom, caramelised and slightly stuck, are the prize. Fight your dining companions for them without shame.
